Summary :
Provence, it is beautiful, it is good and it is big! By adding the Comtat Venaissin, it represents the departments of Vaucluse, Bouches-du-Rhône and Var. Between land and sea, it is necessary to distinguish two authentic Provences.
One, that of the interior, immortalized by Alphonse Daudet and Jean Giono, where the chicken truffled with herbs is served after a tasty wine of bitter oranges, where the scents of the garrigue soup, which warms up from the mistral of the hills, rival the aroma of the rabbit with goat and black olives.
And the other, that of the coast where the cool Bandol tempers the bright heat of the summer months with red mullet tartubes with tapenade and sardines marinated in lemon, pine nuts and grapes, that of the small fishing ports, nestled at the bottom of the creeks, where Fernandel, Pagnol and Caesar frequent, sitting for eternity in front of a good bouillabaisse and its legendary rust.
It is indeed this country of contrasts - rustling with colors, singing rosemary and lavender, celebrating in the same love the green nature and the Big Blue - that we propose you to discover and taste through emblematic recipes of this Southern cuisine, showing that taste has its history...
